The Acid Spectrum
Sharp/harsh: White vinegar (5-8% acidity), distilled malt vinegar Bright/citrusy: Lemon juice, lime juice, citric acid Fruity: Apple cider vinegar, sherry vinegar Mild/sweet: Rice vinegar, champagne vinegar Complex: Balsamic vinegar, red wine vinegar
Common Substitutions
White Vinegar to Apple Cider Vinegar
1:1 ratio. Works for all applications. Adds slight apple flavor.
Balsamic Vinegar (hard to replace)
Quick substitute: 1 tbsp red wine vinegar + 1/2 tsp sugar or honey.
Or: grape juice reduced by half.
Lemon Juice
- Cooking: white wine, rice vinegar (use slightly less)
- Baking: white vinegar, apple cider vinegar
- Beverages: lime juice 1:1
Using Acid in Cooking
In Baking
Any acid activates baking soda. Rule: 1/4 tsp baking soda needs ~1 tsp vinegar/lemon or 1/2 cup acidic dairy.
In Marinades
Too much acid makes meat mushy:
- Fish: 15-30 minutes max
- Chicken: 2-8 hours
- Beef: up to 24 hours
In Dressings
Ratio: 3 parts oil to 1 part acid. Choose based on flavor profile.
Finishing Sauces
A squeeze of lemon or splash of vinegar at the end brightens the entire dish.
